Mexican Pork with Vegetable Rice

| 2 c. Minute® Brown Rice, uncooked |
| 1 c. frozen corn |
| 1 envelope taco seasoning mix, divided |
| 1 Tbsp. fresh cilantro, finely chopped |
| 1 lb. pork tenderloin, cut into strips |
| 2 tsp. oil |
| 1 c. red bell pepper, strips |
| 1 c. zucchini strips |
| 1 c. onion wedges |
| 1 c. water |
Directions:
1. Cook rice as directed on pkg., adding corn and 1 Tbsp. of the taco seasoning mix to cooking water along with rice. Stir in cilantro.
2. Meanwhile, cook pork in hot oil in large nonstick skillet on medium high heat 2 to 3 min. or until pork is browned. Add remaining taco seasoning mix, red bell peppers, zucchini, onions and water. Cook on medium high heat 5 min. or until vegetables are crisp-tender, stirring occasionally.
3. Serve pork mixture over rice mixture.
